I've never hung my pack and have only seen three hung in all the time I've spent in the backcountry. Depending on the pack I'm using, I'll either unzip all of the zippers and cover with a heavy plastic bag or even bring my pack inside the tent with me (makes a great pillow). I'm more worried about rodents eating my gear than i am of bears.
That said, I am EXTREMELY careful with my food bag. Besides placing most of my pre-packaged food into another ziplock, I also line my bag with still another large ziplock. I'm not worried about odors migrating their way onto my pack or its contents.
